When my kids were growing up, a meal that they often asked me to make for them was meatloaf. "Meatloaf, it's like a big meatball!" they would say excitedly. And so, countless times, we had meatloaf for dinner when they were kids, and they loved it. It was so much fun to make for them and yummy to eat. The loaf's warm and fluffy taste, along with our homemade gravy's fantastic flavor, was simply out of this world. Now that we're WFPB, I wanted to find a way to re-create this meal and capture that same magic that it used to back when I made it for my family. And, as you can tell by the title of this recipe, that's precisely what I did. This meatless loaf is simply incredible with all the whole food ingredients and non of the added salt, oil, or sugar that comes with a standard meatloaf. It captures that same magic in both its flavor and presentation. Really, it makes me wonder why I haven't thought of this sooner! And, when you make this yourself, I hope that the same joy this brings to my life is what it can bring to you and your family.
