Looking for a versatile food that could be both a snack and a salad?...Okay well I know that is oddly specific, but it will make more sense as you feast your eyes on the zucchini, tomato, and basil salad! This meal is sort of the jack of all trades. It can double as a meal or an appetizer, you can eat it with some chips like a pico, or it may serve some other purpose we haven't even thought of. The point is, this meal is certainly unique in how it can be eaten in many different contexts. I mean, you could even serve this up at a party! And, to top it all off, it tastes pretty good if you ask us. So, go on and give it a shot. We hope you'll enjoy it as much as we do!


Zucchini, Tomato, Basil Salad
Prep Time: 10 Minutes
Ingredients
3 cups zucchini, chopped
3 tomatoes, chopped
1/2 cup fresh Basil, chopped
Tomato and Basil Balsamic to taste (or balsamic of your choice)
3 tomatoes, chopped
1/2 cup fresh Basil, chopped
Tomato and Basil Balsamic to taste (or balsamic of your choice)
Instructions
1. Place all ingredients in a bowl and toss with balsamic.
