Vegging Out Soup

Hello Friends and Family,

Today we created an unbelievable delicious vegging out soup made with a variety of vegetables including celery, carrots, green onions, and butternut squash and white sweet potatoes. If you love veggies and soup, then you will absolutely love this soup. We paired it with a delicious Grilled Romain, however it will go good with any type of salad or delicious homemade bread.

Vegging Out Soup

Print Recipe

Ingredients

– 3 cups colored carrots, peeled and chopped
– 3 cups celery, chopped
– 2 cups green onions (use the white and green parts), chopped
– 2 Tsp. garlic powder
-2 Tsp. onion powder
– 3 Tbsp. garlic, minced
– Fresh cracked pepper to taste
– 1 medium butternut squash, cubed (6 cups)
– 3 to 5 small white sweet potatoes, cubed (4 cups)
– 6 cups water
– 2 to 3 Tbsp. Better than Bouillon low sodium veggie base

Instructions

1) Water saute carrots, celery, and green onion, until soft. Add fresh black pepper to taste
2) Add sauted veggies and all remaining ingredients to an 8 quart instant pot. Add fresh black pepper to taste
3) Cook on high pressure for 40 minutes, slow release 25 minutes
4) Enjoy!
