Pumpkin Waffles

I remember being a kid and waking up on weekends to the sweet smell of breakfast. I would run downstairs and see the feast prepared that my mom called a "normal breakfast". There would be all kinds of food ready on the table, from eggs, to biscuits, to hash browns, and all kinds of other stuff. At the center of all that would be a delicious stack of waffles. Now, being someone who doesn't eat animal products, added salt, or added sugar, it's hard to image waking up to a breakfast like that now...except I do. Every weekend, I wake up and make homemade hash browns, "egg" omelets, and of course waffles. And these waffles are not only just as tasty as a normal waffle, but they also give you the energy you need to tackle whatever tasks you have planned for the day. Put a little maple syrup on top of these pumpkin waffles and you'll never want to go back to a sugary-filled waffle ever again!

Pumpkin Waffles

Cooking Time: 7 Minutes

Print Recipe

Ingredients

1 can of pumpkin (make sure the ingredients are “pumpkin” only)
2 cups rolled oats
1/4 cup ground flax
1 cup fresh applesauce (if you do not make your own, use unsweetened)
1 Tbsp vanilla extract
2 heaping tsp cinnamon
1 heaping tsp pumpkin pie spice
1/4 to 1/2 tsp clove

Instructions

1. Blend all ingredients well in a high speed blender until smooth.
2. Place some of the batter into a waffle iron and cook for 7 minutes (note – do not open the waffle iron before 7 minutes or it will stick).
3. Serve waffles with fresh berries and organic maple syrup, accompany with a beautiful “go to” salad and fresh potato hash browns
4. Enjoy!
